I spent the morning and part of the afternoon stripping the bottom paint.  While the existing paint was in good condition and wasn't overly built-up, it was a fresh-water paint, and with the boat destined for the ocean this time around, we were unsure of the compatibility between paints, and decided to remove it.  I scraped and sanded off the paint, and smoothed the surface through 80 grit.

After cleaning up the mess left over from the job, I sanded the starboard topsides again, this time with an orbital finishing sander and 80-120 grit paper.  This round of sanding removed the final remnants of primer left over from the bulk paint removal and further smoothed the surface without interrupting the basic fairness of the hull.  I had enough time before the end of the day to complete the starboard hull and transom; I'd complete the port side in the morning.
